Champorado

Champorado or Tsamporado is just rice with pure cocoa. Before making champorado you have to cook the rice and let it boil until tender. If you are going to tenderize the rice make it like a cup of rice and three cups of water. Stirring constantly makes the water a bit sticky and the rice more tender. Mix the grounded pure cocoa into the rice. When it is done (it has to be with water not dry) scoop it with a laddle and put it in a plate then mix with milk I like evaporated milk and with little sugar my Champorado is done!

Camote Cue

When I first cook this hubby ask me what it is. I told him it is a sweet potato cook in oil and covered with caramel. He only knew about baking sweeto potato but not my way of cooking it. In the end he likes it and from time to time I cook the sweet potato this way especially if I crave for it.

Bokchoy or Pechay with sardines

We call this vegetable in the Philippines petchay but here in US they call it bokchoy. Nevertheless, they are the same though some are big others are small. From time to time I crave for vegetable dish unlike in the Philippines I had to send somebody to go to the market and voila fresh vegetables, fruits and meat are there after several minutes. Every time hubby and  I went for grocery shopping (at Asian store) I bought plenty of vegetables and in order my vegetables not to rot I have to cook it  immediately. One of my bokchoy dish with a twist.

                                 Ingredients : olive oil, garlic, ginger, bokchoy, sardines and sesame seed.

Yellow Mango

                                                       Here is my Sushi Bowl I made it!

Why this is not wrap because I choose not to. First I do know how to wrap it and I like the easy way lol! First I do not have a fresh tuna or salmon and I do not like to bet or gamble the fish I buy in the store so I choose to cook my shrimp. Then on a the bowl at the bottom I put rice, then I slice mango, avocado, imitation crab, some lettuce and radish. And in the middle is the sushi wrapper I crumble it and put in the middle. When I was done plating I am ready to eat what do you think of my concoction.

Chips Tortillas

I was at my SIL when I first tasted these chips tortillas. I thought of making it for me so when I get home I immediately made it. It was a long trial and error and even until now I still try to figure out the right temperature and time to make it crispy and not burnt. One time I made one batch and oh it was so good because the brown sugar was caramelized on it and it was crispy the bad part is hubby don't like it too sweet so had to adjust it again, lol!

I used whole wheat tortillas, cut it using a pizza cutter (you can use knife though)
I brush  it with butter
Drizzle some brown sugar and cinnamon
Put it in oven for at least 15 minutes to 330F. This part is crucial not everyone has the same oven so you must watch it often.

This morning I prepare our breakfast. When I was done doing my  thing in the kitchen I called hubby and he was amazed how little the food was on the table hahahahaha, I told him this is only around 300 calories maybe and if we want to lose weight naturally we have to do this, lol! But then I told him do not worry  I am going to cook lunch too with just less than another 300 calories hehehe.  Here is my first breakfast that I think it is healthy.

                                                                     The ingredients

                                                                 The Breakfast

Spaghetti Squash and Pork Stir Fry

The other day we were talking about what we had from our garden. I told them that pumpkins are very expensive I am certain I would plant more pumpkins next year. Then the word spaghetti squash came out. I have never tasted nor cooked spaghetti squash I do not have any idea what it looks. My husband says he had it before and my SIL like it very much. I asked her how I am going to cooked the spaghetti squash after hearing everything I am destined to try it. The next day I went to a closest farm and there it was the spaghetti squash. I could not believe how much it is worth one piece is $2.00. So I thought another plant to plant next year, my list just add up every year to what to plant. Anyway, that day I cooked my very first spaghetti squash.

Spaghetti squash and pork stir fry
Still in the wok
Ingredients:
* 1 2-pound spaghetti squash
* 1 pound pork tenderloin, cut in length
* 2 tsp sesame oil
* 2 or 3 green onions (  I used our Egyptian onion the smaller leaves)
* 3 cloves of garlic, mashed and minced
* 1/2 tsp of ginger paste ( you can use fresh ginger)
* salt  to taste ( be careful with salt because you already have a soy sauce)
* 2 tablespoons of soy sauce
2 tablespoons rice vinegar
*  1 pinch of chili ( optional)

Directions:

1. Preheat oven to 350 degrees F.

2. I cut in halves the spaghetti squash. Use the big knife you have because it is a bit hard. Cut in halves, scooped the seeds ,discard. I then put the two halves in a baking sheet, cut side down, I drizzle some olive oil for a little bit of taste. Bake until the squash is tender, about 45 minutes but check it out often. Let cool then shred the flesh with a fork.

Note: This part  I was very impressed. Because it is my first time to cook spaghetti squash. When I shred the meat with fork it just fall like a spaghetti form ( see above) I do not have a hard time shredding it. They look like spaghetti!

3. Slice pork into thin lengthwise.

4. Heat a large wok over low-medium heat. Put the oil, then add onions, garlic, ginger and salt; cook, stirring, until fragrant. Do not let it burn. Add the pork, and stir, let it cooked for 3 minutes. Add the squash threads and cook, stirring, for 1 minute. Add soy sauce, rice vinegar and chili, stir, let it cook for a little bit. Do not cover just stir the squash until all the ingredients are mix. You can smell the aroma it does smell good.  And the taste it is so good! Try it!

Avocado Ice Candy

I remember when I was a kid the first thing in mind if I got some money (cents) I got to buy an ice candy. Ice candy in the Philippines is most common "snack" specially if it is too hot. The flavor on making ice candy varies from what fruit is in season. You can also make an orange ice candy from orange juice. The other day I had three almost over ripe avocados  or guacamole. So I decided to make an ice candy. I get my ice candy wrapper (I bought in the Philippines), get the avocado meat and put in the blender, mix some sugar and water then I blend it. I then one by one open the ice cream wrapper and with the help of a funnel fill the wrapper with the avocado mixture. I fill half of the ice candy wrapper and the other half twis it and tie. This is how it looks. I put it in the freezer and when it is hard it is ready to eat!
