Apple Crumble

Hubby love anything with apple specially if it is for dessert. The other day I found this simple recipe for Apple Crumble. I check my pantry of course I do not have  Granny Smith apple. I drove to a nearest farm and found out they also do not have Granny Smith yet instead they refer me another kind of green apple and the name is Goldenrod.  I taste it and it was almost the same taste as Granny smith. So I went home and immediately get busy baking for my honey. Here is my Apple Crumble.


Ingredients:
Topping:
2/3 cup all-purpose flour
1/3 cup rolled oats
 3 tablespoons granulated sugar
1/2 cup (1 stick) butter

Filling:
4 large apples, such as Granny Smith (I  used Goldenrod)
2 tablespoons firmly packed brown sugar
1 teaspoon cinnamon

Procedure:
1. Preheat oven to 425F. Grease a 2-quart baking dish.
2. For the topping, place the flour, rolled oats, granulated sugar and butter in a large bowl. Mix well.
3. For the filling, peel, core and slice the apples. Layer the apple slices in the prepared baking dish. Sprinkle the brown sugar and cinnamon over the apple slices. Sprinkle the topping mixture over the top.
4. Bake until the apples have softened and the crumble is lightly golden, 20- 25 minutes. Serve warm.

Cantaloupe

 We harvest plenty of cantaloupe in our garden. In order not to get wasted I make it a refreshing drink. I did not blend the cantaloupe meat to a blender instead I scrape it with a scraper. If you do not have a scraper you can use a fork. After all the meat is in the pitcher you add sugar and evaporated milk. I put lots of ice cubes and a little of water. Put it inside the refrigerator after about an hour take it out and voila it's a refreshing drink!

Pinakbet with Lechon

When you live here in the US we all know that not all vegetable are available to you in a matter of minutes. Unlike in the Philippines when vegetables are fresh and you can find it in the market every day. Here in my place I have to travel about an hour just to get the vegetable I need but with the high price of gas I would settle to what is available in my garden. Right now my garden is producing great with tomatoes, eggplant, beans, cabbage etc. Last week I had a bring home food (lechon or roasted pork) from a friends party. I was craving for vegetable and so I decided to make paksiw with lechon. I also mix a little of shrimp paste and the dish is really good. Here is my shot for my paksiw with lechon.


Ingredients:
* Beans
* Eggplant
* tomatoes
* shrimp paste
* lechon or roasted pork

Verbena Lemon Tea

Since my verbena is growing fast and has plenty of healthy leaves I decided it is time to make a tea out of it.


Simple Lemon Verbena Tea Recipe
Ingredients
  • 1 cup fresh Lemon Verbena leaves
  • 1 quart Water
Instruction
  • Take a pan and boil the water.
  • Remove from heat and toss in Lemon Verbena leaves.
  • Cover it with a lid and allow it to steep for about 5 minutes.
  • Cool for some time, and then strain the tea and serve. source: http://lifestyle.iloveindia.com

Banana-cue

One thing that I missed in the Philippines is the food. One particular food is banana-cue. We eat this for snacks I remember when I was in college and high school this is what I can only afford to buy for snacks. It does fill your stomach and it is a cheap snack too.

Lechon Manok

Here in the Philippines you can find many Lechon manok or Roasted chicken stalls every where. One piece of chicken cost 125.00 pesos or 150.00 depending on the size. This is the kind of food when if you feel lazy to cook then go run to a lechon manok stalls and voila you have food on the table.

Yummy!

We were at Golden Corral and since the restaurant is a buffet I opted to get some healthy food with the roast beef on my plate. I like the plate and soup bowl color. What is on my plate is roast beef, green bean, black olive, sweet carrots, and salad. Lots of vegetables huh? ^_^

Ham Roll

I called this ham roll. Hubby like this that last Saturday I brought this to a friends birthday. I usually make ham but yesterday I mixed it with turkey. Before I roll the ham/turkey I spread a cream cheese, then put a green onion and then roll. Stick a toothpick to hold the roll then cut into half. That's how easy it is.

Puto or Rice Muffin

Last Tuesday I made something for my kids at school. I decided I will cook puto or rice muffin for them. I did not know that the twins in my class is going to have a birthday this Thursday. Puto is made of ground rice but  I do not have a ground rice so I only cook the pre-puto mix. It was my first time to cook pre-puto mix and it turned out really good. 

This is the pre puto mix that I bought from an Oriental store.
















 I follow the directions on the box. And with my colorful molder I put 3/4 of the mixture.
I let my steamer boil then I put my puto to steam for about 35 minutes. But 5 minutes before the steamer turn off I put the cheese on top. When it is done the cheese melt and it mixes to the puto.









 These is how it looks when I opened the puto before the steamer turn off. I put the cheese.
And here is what it looks like when the cheese melted. When I go back to the Oriental store this weekend I will buy more of this puto mix because I like it and so my students at church/school.

Fish Escabeche

                                Before Christmas I had this Fish escabeche or sweet and sour fish.

                                                               First I fry the fish.

                                    Then I saute the onion, garlic and carrots (julienne)

                Since I like the carrots to be still crispy I didn't over cooked it. I immediately mix the
           packed sauce ( u can see it below) and let it boil. When it boils turn off the heat and put the fish.
                            Scoop the sauce into the fish so the sauce will go inside the fish meat.

                                               I am using Mama Sita f or sweet and sour sauce

Custard Pie

Hubby loves custard pie I love egg pie. One time hubby and I were talking about our comfort food and he told me the story that her mother used to make custard pie and every night he ate it. While I, growing up I like to visit my Aunt restaurant because they make  a very good egg pie and it's my favorite. For years I have been looking for a good custard pie/egg pie that I can tell this is it!! Few days ago I found it and today I make two. I brought one to my step-sons house and the other custard pie I left it here at home for my hubby to munch when he feels the craving hehe.

Eating Galore

Wow yesterday was I called eating galore! Went to two parties first at our family party started at 2 pm and don't know when it end because hubby and I went home at around 6pm since we are going to another party. Eating galore was our drama yesterday, I took some desert pictures at our family party and here it is. Oh by the way, I made pineapple cheese casserole and cream cheese soup.

                        One of the dessert that is so colorful last night at our family party. But didn't eat any lol!

Adobong Pusit

  Hubby and I went grocery shopping before Thanksgiving day and when we get home hubby asked me if I can  get some of the stuff from the freezer and put some of the stuff in the refrigerator. I know he can do it but he just don't want to see some of my buddies in the freezer...hehehe...yes the frozen fish! While sorting some of my stuff I found a box of squid. I thawed it immediately and cooked it. Hubby thought this is our breakfast last Thanksgiving day hahaha. I told him don't worry hon, I will cooked American dish since it's Thanksgiving day, and that is when I made him Baked apple oatmeal for breakfast and he was happy as a lark ^_^

Thai Resto

Last Thursday hubby and I went for grocery shopping. Across the grocery store is a new Thai Restaurant so we decided to stopped by after grocery shopping. 

Hubby ordered this Sushi
