One of my favorite vegetable is alugbati also known as Malabar spinach. Some do not like to eat this because when it is cook it gets slimy that when you over cooked these vegetable. When I was in the Philippines for a month I splurge in eating this kind of vegetable. It's one of the cheapest vegetable sold in the market and it has more nutritional value. Wikipedia
How I prepare this delicate green leafy vegetable. I prepare onion, garlic and tomatoes. In a pan I saute the onion, garlic and tomatoes. Then I put the alugbati leaves, do no cover since it will just give too much water. I put a little vinegar, put a little salt and stir it quickly. I want it a bit crispy so I won't stir it too much when I see that the leaves turn to a dark green I turn off the fire and let it simmer. With rice and fried fish, great simple dish for me! ^_^

my mom cooks alugbati, usually sauteed with pork or shrimps and squash. i never like it, ang kapal kasi ng dahon, and yes, slimy.:p
i like this veggie, though it's not readily available in the supermarkets. oo nga, simpleng veggie dish paired with fried fish and steamed rice is heaven!

I love alugbati, too! I usually include alugbati in our ginisang monggo.
