Iscabecheng isda/fish

If you notice when you are around with Filipinos we always have, fish sauce, soy sauce and not enough we put salt when we are cooking with our food. In other words we Filipinos love salt and it 's very bad for our health.  This escabeche fish is not the typical escabeche my mom used to cook for us. This one is very simple. Fry the fish. In another pan, saute the garlic, onions an tomatoes, ginger the  put a bit of soy sauce (if you like) water and let it boil. When it's boiling put the fish and to make it a bit sour you can put vinegar. My mom used to put a little starch to make the sauce thick. Turn down the heat to low and simmer till the fish absorb the sauce. Just like that though there are so many variations in making escabeche fish ^_^
