- I made this last Friday and it was awesome. In the original recipe there was no shrimp in it but since I was craving for seafood I thought of putting a shrimp on it and it came out really2x good. Here is the picture.
3 ounces uncooked angel hair pasta 1 cup chopped zucchini
1 1/2 cup fresh mushroom
1/3 cup chopped green pepper
1/4 cup chopped onion
1 garlic clove
2 tsp olive oil
1 pc tomato diced
dash of pepper
mozzarella cheese (sprinkle on top)
Cook past according to package instructions. Meanwhile, in a large skillet, saute the zucchini, mushrooms, green pepper, onion and garlic in oil until vegetables are crisp-tender. Stir in the tomatoes, olives and pepper; heat through.
Drain pasta. divide between two plates. Top vegetable mixture and cheese. Good for two.
Note: I modify some of the ingredients a good cook can modify any recipe according to your taste and ingredients availability. Happy eating!!
