Piniritong Paksiw

Here in Michigan we have to drive at least 45 minutes just to buy fish. I have to buy different kind of fish and Galunggong is one of them. Last week a friend of mine cook galungong and it was just so yummy. The other day I was craving for fish, and I remember my friends way of cooking galungong. I first cook the fish in a paksiw way, then I fry the fish then after frying I put it back to where I fry the fish, and voila it's an instant fish cuisine, lol!! And can you imagine me eating all those fish alone? Well not in one day but for several days, lol!

We do this, too, especially if we have a lot of fish paksiw leftovers. The paksiw flavor in the fried fish is what really makes this fish dish flavorful.

when we were kids, my mom fried leftover fish paksiw from dinner for breakfast. she still does it sometimes--it's perfect with tuyo-kalamansi dip and fried rice.:p
