Butter squash

I already harvested my butter squash, pumpkins, tomatoes, eggplants and bell peppers from my garden. It started to cool down and I am kind of afraid if all of a sudden we have frost. What I did with my bell peppers is freeze them. And my butter squash I keep it in the basement since it is cooler there. Well last Monday hubby was kind of craving for a bake butter squash with brown sugar, cinnamon and butter on it. Me as a Filipina is new to this kind of recipe lol! Because what I do with my squash is to  cook it with pork, okra, eggplant and shrimp paste to make a dish called pinakbet. Anyway, what happened is that I do like it. I love the smell of of it and it smells like "biko" a dessert that is very common in the Philippines. Right now I am thinking of buying more and stock it in a bushel for Fall and Winter consumption. Try it!

My mom would always make it like that too. I'll stick to a savory version, I think your Filipino way to prepare it sounds delicious!
