Pinakbet with Lechon

When you live here in the US we all know that not all vegetable are available to you in a matter of minutes. Unlike in the Philippines when vegetables are fresh and you can find it in the market every day. Here in my place I have to travel about an hour just to get the vegetable I need but with the high price of gas I would settle to what is available in my garden. Right now my garden is producing great with tomatoes, eggplant, beans, cabbage etc. Last week I had a bring home food (lechon or roasted pork) from a friends party. I was craving for vegetable and so I decided to make paksiw with lechon. I also mix a little of shrimp paste and the dish is really good. Here is my shot for my paksiw with lechon.


Ingredients:
* Beans
* Eggplant
* tomatoes
* shrimp paste
* lechon or roasted pork

Paksiw

One thing here in the Philippines we can buy fish fresh. Every day we go to the market  fresh fish is every where. Last night we had paksiw na isda. Since I arrived last week what I ate the most is fish, vegetables and fruits.  I will definitely miss this dish when I get back to the US.
