Apple dapple

For the past four days I've been eating rice. It's the left over from the open house last Saturday. Hubby is the one making the fried rice and I just instructed him how to do it. He is making though at first he is a bit qualm on how to stir and how to chopped the garlic but through my loving instructions he got it right away lol!
But today I decided not to eat rice for a change? I looked at the pantry and here it is my favorite the apple dapple. It's a bit sweet but with the milk it doesn't taste too sweet. The thing with eating cereals in the morning I get hungry at 12noon, compared to rice I can go without eating the whole day until around 5 or 6 pm then my stomach starts to say I am hungry. Well that is for now I am hungry I have to fix something. I am thinking of cooking the zucchini and put a little bit of pork, hmm will see!

Cheesy Zucchini


Before the rain pours hubby and I went to the garden and weed. I did well in weeding but the most joyful is that I found my first 2 zucchini and one cherry tomato!! Of course, since I love to eat cherry tomato I didn't wait to wash it I just wipe the tomato into my shirt and voila it was clean. So I told hubby I am going to cook zucchini today it's different when we eat fresh most of all  fresh from our garden without any insecticide!! Here is what we had.

Okay so here is what I did. One big zucchini, I cut it in four lengthwise, took out the seeds then chopped. I minced 3 cloves of garlic and minced. I prepare a pan put a tablespoon of oil, saute the garlic till it's done but not burn. Mixed the Zucchini cover till it's tender and stir it at least 2 times. You notice there will be water but that is okey. When the Zucchini is tender seasoned it salt and parsley, stir. Then simmer it for at least 2 minutes or more until the water evaporates. When the water is almost gone, put the cheddar cheese. Some put parmesan and mozzarella but what is in the refrigerator is cheddar cheese. Stir a bit and let the cheese melt, turn off the stove. That's it hubby love it.
