Stewed Pork with rice

Hubby and I are not beef eater. Instead of beef I change it to pork. The result of the dish is pretty good. Hubby love it and I love it because of the rice lol!

                 Ingredients:
  1. 1 small onions, chopped
  2. 1 small garlic clove, minced
  3. 1 tbsp canola oil
  4. 1 lb pork loin, cut into small pieces
  5.  2/3 cup tomato sauce
  6.  2 tsp red wine vinegar
  7. 1 tsp dried oregano
  8. Dash pepper
  9.  2 tbsp sliced pimiento-stuffed olives
  10. cooked rice
In a large skillet, saute onion and garlic in oil until tender. Add pork; saute 2-3 minutes longer. Stir in the tomato sauce, vinegar, oregano and pepper. Bring to a boil. Reduce heat; cover and simmer to 30-35 minutes or until meat is tender and sauce is thickened. Stir in olives. Serve with rice.
