Summer squash & Zucchini

To those who had a garden and planted vegetables last spring for sure you are already harvesting the fruit of your labor. Hubby and I had a little garden and we planted different vegetables on it. Since last week we started to harvest different kind of veggies, like zucchini and summer squash. Before I do not know what to do with this two vegetables they are not familiar to me. But I search online and found simple but tasty recipe to go with these vegetables. Here is my saute zucchini and summer squash.

I cute the summe squash and zucchini almost the same size. I did not peel them. I cut onions, green pepper and garlic. In a wok or pan I put butter then put the onion and when it is translucent I put the garlic. Then I put the zucchini and summer squash together with the pepper. I cut one medium tomato and broil it. When the vegetable is soft and done I put on top the tomatoes and minced parsley. Serve while hot! Hubby loves it!

I fry chicken which hubby loves and on the side is my vegetable saute. I did not know it does look good and taste good I will do this again for sure. Try it too!

  7. I made these veggies last night only I roasted them all in the oven at 450 degrees...and added some sliced potatoes...the combination is delicious.

  8. Oh sweet Kim, this looks so yummy! I love zucchinies and squash, your recipe looks great and also light..yeah, I do watch my weight, but of course, not for my dinner parties, lol...
