Vine spinach or Alugbati

When I was in the Philippines this green leafy vegetable  called "alugbati" or vine spinach in English is one of my favorite. I cooked it the easy way. After cutting the leaves, washed it then put it in a deep pan or wok. Do not put water instead put soy sauce for seasoning. Do not cover because this vegetable takes out a lot of water. Let the soy sauce gives the seasoning and when the leaves are done you can put garlic powder, pepper, but no salt because the soy sauce is already salty.

When I got here in the US it is very hard to find this kind of vegetable. Last Saturday we went to a Farmers Market and saw this vine spinach or alugbati I bought a bunch for $2. Today, I cooked it and with squid and rice I feel good ^_^
