I was craving for something salty today so I cook Talong (eggplant) and bagoong (shrimp paste) with matching pork fat ^_^ First, I pan fry the pork fat (cut in cubes) until all the oil is out and the pork is crispy. Then I mix the onion then the garlic. Then I put the talong/eggplant and stir it well. Let it simmer for awhile covered. After about 5 minutes I put the bagoong/shrimp paste then stir it again. I adjust the heat to med-low and uncovered the lid. Look if the water is evaporated and what is left is the oil then it's done! I ate it with rice so yummy!!
