Spare ribs

We had a supermarket here that I noticed they have the cheapest meat specially  when it is on sale. So every weekend I see to it that I dropped by in the meat section and what is on sale. And most of the time I always ended up buying the spare ribs and the pork loin. Last weekend, I bought two huge packed spare ribs and two packed of pork loin. So the other day I made spare ribs with a twist.
I used to make spare ribs soup or make a barbque but this time I make it differently. Here is the recipe.

  1. spareribs
  2. oil
Chopped green onions and diced red bell pepper to garnish.
Marinade:
1.  1 inch piece ginger root ( i used ginger paste)
2. 2 garlic cloves, finely chopped
3. chili powder
4. soy sauce
5. juice of 1 lemon
6. oil ( I used corn oil)
7. honey
8. five spice powder
Mix together all marinade ingredients.

Put spareribs into a shallow, non metallic dish, add marinade and turn ribs to coat thoroughly. Cover and refrigerate 2 or 3 hours, turning occasionally. Remove ribs from marinade, reserving marinade, and dry ribs with paper towels. Heat oil in a wok or large skillet, add ribs and cook, in batches, 2 or 3 minutes, turning until browned.
Pour off most of oil, return ribs to pan and add marinade and enough water to cover. Bring to a boil, reduce heat, cover and simmer, stirring occasionally, 1 hour, or until meat is tender. Boil rapidly to reduce cooking liquid to a thick sauce. Arrange  ribs to a plate garnish with green onion and bell pepper.
What makes me happy with this dish is that hubby loves it and if hubby loves it I am a happy wife!! ^_^
