Cooking Mussels

Five more days to go and Summer ends! Time flies so fast I am looking forward to Thanksgiving day. The first time I cooked turkey I am overwhelmed. I haven't had any experienced such huge bird. But with my first attempt I'd tell you I became so good, my turkey is moist and taste so good. And why is that because I infuse my Oriental seasoning to it -wink- that's my secret though.
Anyway, yesterday I cooked mussels. I saw cheap mussels in our supermarket and for just $3.50 you have 2lbs. It says in the package that it is clean and cooked. What I did to cooked it here it is.

  1. 1 pack mussels
  2. 2tbsp butter for sauteing
  3. onion (chopped)
  4.  garlic (chopped)
  5.  tomatoes (chopped)
  6. 1 small coconut milk
I saute the onion, garlic and tomatoes in the butter. Let it produced their natural water. Then put the mussels. Cover it and let it simmer. When it is boiling put the coconut milk. Season it with salt and let it simmer for awhile, stir so the coconut and the tomato will be absorb by the mussels. That's it you are done. A very easy to do dish. Try it out!
What makes me happy is that hubby loves it. He goes to get more rice ^_^ because he loves the soup with his rice. He told me last night he loves seafood and so do I!!
